Day 8 Frugal Salad

 Hello again and thanks for the lovely comments, I always love to read them. I didn't make it into work today and slept through it. After almost 24 hours in bed, I was famished and really felt the need for a plateful of something really protein filled and nutricious. Someone once mentioned that they liked salad, which is not much of a frugal option at this time of year, but I don't worry about the price as I don't find it much more expensive than any other fresh veg, unless I grow it myself.

For supper we had homemade: salsa, falafels and carrot, sprouting seeds and beetroot salad. I made salsa from chopped two tomatoes, one small diced onion, two finely diced and deseeded chillis, lime juice, which I buy bottled and keep in the fridge for weeks, along with some chopped corriander and then stir together and serve immediately
I had sprouting seeds in the cupboard, which I've had sprouting in the cupboard this week, along with three grated carrots and and I added some diced beetroot. I make the dressing from three tablespoons of olive oil, one tablespoon of cider vinegar, a teaspoon of dijon mustard and a sprinkle of salt. Shake together in a jam jar, pour on, and stir.
 We had it altogether with some sweet chilli sauce, which also needed using up.
The sprouting seeds and falafels are full of protein and the new shoots from the sprouts, and of course the carrots and tomatoes are bursting with vitamins.It was just what I needed.

I'm looking forward to a couple of weeks off, visiting family, looking after parents, tidying up the house, getting some maintenance done, having some time for craft, gardening and having time with my son and daughter. I'll be here every day and I look forward to seeing you all again tomorrow.
