Just in case any of you are missing the food blogging; here's today's lunch.
One onion, finely sliced, one head of romaine lettuce finely shredded, three pieces of sun dried tomato with the oil patted off with a clean cloth and then cut into tiny pieces, stir together and set aside.
Fry Quorn in the tiniest amount of oil you can get away with, keep moving to brown gently on every side.
Mix together a teaspoon of paprika, a teaspoon of cumin and a quarter teaspoon of salt and then sprinkle over all the quorn, stir thoroughly. I use bottled lemon juice and after removing from the heat, I liberally splashed lemon juice all over it.
I made the dressing from the very low fat mayonnaise I have, it is also very low in carbs. I mixed the mayonnaise with equal amounts of lemon juice and a sprinkle of salt, I then spooned that over the quorn and salad. Very low fat, very low carbs, high in protein and cheap and still under £1 per person.
